The Best (and Easiest!) Thing You’ll Ever Bake- Oreo Cupcakes

I’m in the middle of moving and have been lucky enough to have several guys (Sean and his friends) to help me out. I’ve learned over the years that the best way to say thanks to men is with my secret weapon- the Oreo Cupcake.

They’re delicious and cookie filled, and undeniably addicting. Bakers Beware- if you start making these, you will suddenly find yourself volunteered to make them all the time. Luckily, they are so easy that it is not a problem.

INGREDIENTS:

1 box cake mix- I usually use chocolate but had a request for vanilla this time

Ingredients to make cake mix- in this case 3 eggs, water and vegetable oil

1 pack of Oreos- don’t use double stuffed, you won’t have enough cookies

1 pack mini oreos (decorative-optional)

sprinkles (decorative-optional)

1 can of vanilla icing (I like vanilla better than cream cheese- your call)

Steps to make:

  1. Preheat your oven according to cake mix directions.
  2. Lay out cupcake pans. Place liner in each hole. Place a whole oreo in bottom of each liner.
  3. Split remaining Oreos into two piles. Crush half of the first pile. I like to leave this half pretty coarse and chunky.
  4. Mix cake mix and wet ingredients in bowl. Add crushed Oreos and, if you’d like, sprinkles!
  5. Spoon cake mix evenly into cupcake tins. Place in the oven and bake according to cake mix directions.
  6. While baking, scrape the can of icing into a bowl. Crush the remaining Oreos very finely, almost to dust. Mix crushed Oreo dust with icing. If you’d like, add more sprinkles!
  7. When they are done, take the cupcakes out of the oven. Ice them and top with a mini Oreo!
