Taco Thursday: BBQ Pork Nachos

Morgan and I have been doing Taco Thursday since a couple weeks after we first started dating. We’ve made a wide variety of different tacos, burritos, salads and more. But one thing we had only made once and I had been edging to do again was… nachos. We decided to take a BBQ pork recipe Morgan knew about and turn it into nacho greatness.

First for the ingredients:

2 lb of pork

2 cups of salsa

1 packet of taco seasoning

1 can green chiles

4 cups of water

1 bag of tortilla chips (we went with the scoops)

1 block of pepperjack cheese (to melt into queso)

1/2 of an onion

The first step is easy as pie. Break out your crockpot and put in the pork, salsa, taco seasoning, green chiles and water. Simmer on low all day. If you only have half a day, simmer it on high.

In the evening, when you are ready to munch, lay out your tortilla chips on your plates. Liquify the block of pepperjack in a small pot on the stove. It is best if you mix in a little beer or milk to make it more liquidy.

Before scooping your tender pork chunks onto the chips, easily break them up in in the crockpot with a spoon.

Slow Cooked Pork

Then spread out the meat on your chips and drizzle as much of the queso on as your heart desires. After you have cut up your onion, sprinkle that on top. If you are feeling daring, go ahead and sprinkle a little bit of shredded cheese on top if you’d like (no one will tell).

In the end, you have a wonderfully delicious pile of carbs, protein and dairy! The leftover pork also tasted great the next day when we put the ingredients in taco shells for lunch!
