Hello, all! This week for Taco Thursday, we decided that we wanted to make a nice fruity dish. So, we went with a ground turkey and peach taco recipe!
Here is what you will need:
For the meat:
- 1 lb ground turkey
- Packet of taco seasoning
- 1 cup peach preserves, jelly, or jam
- 2 cups of salsa
Brown the meat in a saucepan. Once it is cooked all of the way through, add the taco seasoning.
Mix that in and then add the preserves and the salsa and let simmer for five minutes.
- 1/3 an onion
- 1 peach
- 1/2 of a large cucumber
- shredded mexican blend cheese
- an avocado
- tortilla shells
Cut the avocado in half. You can score each half and scoop the meat out with a spoon. Sean, however, has this awesome avocado scooper thing that makes it very easy to get every bit out.
Now assemble the tacos! We had leftover small shells from when we cooked dinner at the Ronald McDonald House so we used those. However, due to the large amount of small and drippy toppings on these, we think they would work better in larger shells.
Ta-da! They were scrumptious and so easy! I HIGHLY recommend you try them! You can see that we also made a side of rice and topped it with more of the peach-taco mixture. This was a great combo and was excellent for leftovers the next day.
