Crunchy Asian Chicken Salads

We make a lot of chicken salads for dinner, because they are filling, healthy, and delicious. We usually follow a very similar pattern for those salads, too. While that makes prep and shopping easy, we were itching for a little something different, so we made these Crunchy Asian Chicken Salads.

Cruncy Asian Chicken Salads - Charleston Crafted

Ingredients (for 2 huge servings):

1lb chicken breasts

Romaine lettuce – 1 head

Broccoli slaw – 1/2 pack

1 can mandarin oranges

1/2 bunch green onion

1/3 can asian crunchy noodles

2 T sliced/slivered almonds


Rice Vinegar 2T

Olive Oil- 1T

Garlic (minced) – 1 clove worth

Ground ginger – 2 shakes

Soy sauce- 1 T

Sweet Asian sauce (plum sauce, sweet chili sauce, etc)- 1 T

1T water

Grill the chicken: Sean sprinkled with garlic and ground ginger then threw on the foreman.

Make the dressing: Blend all the ingredients together. I use my magic bullet knock off mini blender. You can also put all the ingredients in a jar, like an old salsa jar perhaps, and give them a few shakes. This is great if you want to make enough for leftovers!

Broccoli Slaw Salad - Charleston Crafted

Chop: Chop the lettuce and throw on your plates. Top each with 1/4 bag of broccoli slaw. Chop some green onions and throw on top of the slaw.

Mandarin Salad - Charleston Crafted

Add the crunch: add the almonds and crunchy noodles. Drain the mandarin oranges and place artistically 😉 over the plate.

Shred: cut the chicken into bite size pieces and throw on the salads.

Pour: a healthy helping of dressing on each salad.
