Eat it or Beat it: Cesar Pork Tortellini Salad

We make a lot of salads (like this one, and this one). While this is still a salad, it’s a little bit different than our every day run of the mill dishes. Ingredients:
1 Cesar salad kit
1 pack cheese tortellini (we used spinach for extra veggies!)
1lb pork tenderloin
1 can cream of mushroom soup
1 packet Cesar dressing mix
1 small tomato
1/3 an onion
1c residual water from the pasta

What to do:
Place the pork in the crock pot. Top with the soup and dressing mix. Cover and cook on low for 8 hours.

Bring water to a boil. Cook the tortellini according to the directions on the package.

Meanwhile, prepare the sauce. Mix the Cesar dressing and Parmesan cheese from the Cesar salad kit. Thin it out with residual water left over from cooking the pasta.

Chop the onion and tomato into bite sized pieces. Click here for tips for cutting an onion.

Mix the lettuce, croutons, pasta, veggies and sauce in a bowl. Place on a plate and top with pork.
