Taco Salad with Creamy Dressing

We love salads and we love Mexican food- any time we can combine the two is great! This week we made taco salad and it was yum, yum, yum!

Mexican Taco Salads - Charleston Crafted

What you need:

one head of romaine lettuce

one pound of chicken

1/3 a red onion

an avocado

a small tomato

shredded mexican blend cheese

a can of corn

a can of black beans

For the dressing:

2 T sour cream

the juice of one lime

minced garlic (2 cloves)

1 t onion powder

1 t cilantro

1 T white wine vinegar

salt and pepper (to taste)

What you do:

Cook the chicken– we grilled ours on the foreman with some taco seasoning.

Make the dressing– combine all the ingredients and blend well.

Cut your veggies– chop the lettuce into bite sized pieces. Chop the tomato, onion, avocado

Combine it all- Top the lettuce with the veggies, cheese, beans, and corn. Add the chicken and drizzle with dressing. We also added crunchy tortilla strips on top- check out next week’s taco Thursday to see how we made them!
