One of my favorite deserts in the whole world is my mom’s peanut butter pie. Last time I was home, we made it together. She was kind enough to let me share the recipe here!
What you need:
8 oz cream cheese, softened
1 c sugar
1 c creamy peanut butter
1 T melted butter or margarine
1 t vanilla extract
1 c heavy cream, beaten until stiff
1 9-inch prepared chocolate cookie crumb crust
1 c semisweet chocolate chips
3 T brewed coffee
chopped peanuts, optional
1-Make the filling- Beat the cream cheese, sugar, peanut butter, butter and vanilla in large bowl until creamy. Gently fold in cream until blended. Spread in crust and smooth top.
2-Make the topping- Combine chocolate chips and coffee in microwave proof bowl. Cover with plastic wrap and mircrowave 2 minutes and stir until smooth. Cool and pour over filling.
Refrigerate pie until firm, then cover and refrigerate. Sprinkle with peanuts if you’d like!
