We had a Thanksgiving potluck lunch at my work last week and I brought my most requested recipe- my corn bread muffins. Any time I make them for any event, they are gobbled up and frequently requested for a repeat.
Luckily, they are super cheap and easy to make!
What you need:
1 box Jiffy Corn Bread mix
1 stick butter
1 container of Sour Cream
1 can whole corn
1 can creamed corn
What you do:
Preheat the oven to 350.
Melt the butter in the microwave.
Combine all of the ingredients in a large bowl. Stir them well.
Scoop them into a pan and bake until golden brown! Your kitchen will smell so good! It takes the mini muffins about 15 minutes but it can take a casserole dish 45. Just watch it well and check the center to make sure it is solid all of the way through.
I cook mine in mini muffin tins because I’ve found that that’s the easiest way for people to grab them at parties. It also allows people to choose as much as they’d like easily.
This recipe makes 6 dozen mini muffins, 1 dozen regular muffins, or one small pan’s worth, if you prefer squares.
