I’ve been seeing this recipe all over pinterest (like here & here) and haven’t found the original source. I decided to try to combine them & try it myself!
Some are called 6 can and some are called 7 can- I somehow ended up with 8 cans and a packet… doesn’t quite have the same ring to it 🙂
Here’s what you need:
Can of Whole Corn
Can of Chicken
Can of Diced Tomatoes
Can of Chicken Broth
Can of Cream of Chicken Soup
Can of Black Beans
Can of Pinto Beans
Can of diced Green Chilis (Optional, for some spice)
Packet of Taco Seasoning (I used low sodium)
All you do is dump everything into the pot & stir. I used my crock pot on high for 1 hour, just long enough to soften up the beans.
Then, I scooped it into 6 Gladware (Soup/Salad sized) tupperwares. I put 5 in the freezer & had one for lunch this week! I plan to bring one for lunch every week for the next month or so. I love have ready made food- the last thing I want to do in the morning is prep a lunch!
